Asian Orange-Soy Marinated Salmon

 

INGREDIENTS:

 

Marinade
• 3 Tbsp low-sodium soy sauce
• 2 Tbsp sesame oil
• 3 Tbsp honey
• 1/4 cup orange juice
• 1/4 cup canola oil
• 3 Tbsp chopped cilantro
• 1 1/2 Tbsp finely chopped ginger
• 2 cloves garlic, finely minced
• 2 green onions, finely chopped
• 2 tsp orange zest
• 1 tsp red pepper flakes
• 4 salmon fillets (4 oz/125 g each)

 

INSTRUCTIONS:
• In non-reactive mixing bowl (plastic or glass), mix together all marinade ingredients.
• In heavy re-sealable plastic bag, place marinade and salmon, turning bag over a few times and refrigerate about 1 to 2 hours.
• Remove salmon from marinade and discard it.
• Place on hot, lightly oiled grill and barbecue for 5 to 8 minutes, depending on desired doneness.

 

Yield: 4 servings. Serving size: 1 fillet (4 oz / 125 g).

 

Tip: Beef or chicken can be substituted for the salmon.
